Recently I've been loving overnight oats! It is such an easy, healthy, and delicious way to start your morning. Packed with protein and fiber, it's a great way to start your day whether you are headed to the gym or your (home) office.
This recipe calls for added protein powder, but you could easily omit if you want. I just like the extra boost of plant-based protein. I like Truvani protein powder because it has simple, clean ingredients. If you are looking to reduce sugar, you could eliminate the maple syrup and it would be just as good. Also, don't let the beetroot powder scare you! The flavor isn't too overpowering and it gives the oats a beautiful pink hue and extra nutrient boost!
Recipe (2 servings):
1 cup old fashioned oats
2 tablespoons chia seeds
1 teaspoon beetroot powder
1 scoop vanilla protein powder
1 tablespoon maple syrup
1 teaspoon vanilla
2 cups unsweetened almond milk
Instructions:
Mix together dry ingredients first, then add remaining ingredients. Mix well and refrigerate overnight. Top with
cherries, strawberries, raspberries, and dark chocolate (I use Hu Gems).
